Basic Honey Soy Chicken Recipe

We eat a fair bit of chicken in our house, and sometimes it’s nice to have something flavoursome instead of plain chicken. So here’s the recipe Phil and I use to make it a bit more interesting:

INGREDIENTS:

  • Either 12 x Chicken Drumsticks OR 6 x Chicken Skinless/Boneless Thighs
  • 1/2 cup Soy Sauce (Gluten Free if needed)
  • 1/3 cup Honey
  • 1 Lemon, juiced
  • 1 Garlic Clove, crushed

DIRECTIONS:

  1. Preheat your oven to 190 degrees Celsius
  2. Combine all of the sauce ingredients in a bowl and mix well
  3. Add the chicken, and stir well
  4. OPTIONAL: cover the bowl with plastic wrap (lol) and place in the fridge for an hour or so
  5. Place the chicken in a single layer in a dish and cover with tinfoil
  6. Cook in the oven for 25 minutes
  7. Remove tin foil and cook without the cover for the last 20 minutes
  8. Remove from oven and allow to cool slightly before serving
  9. Serve with rice, or mashed potato and your favourite vegetables

Sometimes I want to serve the leftover marinade with the dish, so once you’ve removed the raw chicken, using a sieve drain the marinade into another bowl (to remove any raw bits of chicken). When you need the sauce, just add to a pan and reheat until boiling. Reduce to a simmer for 10 mins and if necessary thicken with cornflour.

You can also use this recipe for chicken wings, and if necessary you can add sesame seeds when garnishing.
