Gluten Free Oat Biscuits

Gluten Free Oat Biscuits by Happy Mum Happy ChildThese Oat and Raisin biscuits are gluten free and dairy free.  WEEEEEEEE and they’re SO FREAKING GOOD.  Soft and chewy with a little bit of crunch – PERFECT.

INGREDIENTS
120 grams softened butter (or coconut oil)
1 cup brown sugar
1 egg
½ TBSP vanilla
1 tsp baking powder
½ tsp cinnamon
½ tsp salt
1 cup plus 2 TBSP gluten free flour (I used Edomonds GF Flour)
1 cup raisins
1½ cups gluten free oats (I used Hubbards GF Brown Rice Porridge)

DIRECTIONS
Preheat your oven to 180 degrees Celsius.
Cream the butter and brown sugar. Add the egg, and mix well. Add the vanilla, baking powder, cinnamon and salt, mixing thoroughly. Slowly stir the flour in, and add the raisins and oats to finish. Make sure everything is mixed properly.
Using tablespoons of the mixture, place on a lined baking tray 2cms apart.
Bake for 15 minutes.

Makes 24

NOTES
You can leave the raisins out if you want, just add a bit more oats.  Or substitute it for another fruit.  I’m sure apricots would be delicious!
