Soft Tacos Two Ways

By now you guys may have heard me talking about My Main Course. If you haven’t, it is a new range from Hellers. It is dedicated to making meal times easier without compromising taste / quality.

The range includes Thai Green Curry, Mexican Chicken, Pulled Pork, Savoury Mince, Baked Beans and Green Lentil Dahl. Inside each pack are all the ingredients you need for the base meal. Meaning all you need to decide is which side you want to go with the meal.

All of the instructions you need are on the back of the packs – making it super simple to understand.

I was fortunate enough to be sent this range, which is fully gluten free (can I get a heck yes!). I have tried each and every single one of them and with the help of my children, have picked one (well actually two) that makes a perfect meal.

Soft Tacos Two Ways
The My Main Course that pairs best with this is the Mexican Chicken – but honestly you can use ANY of the My Main Course range in a soft taco. However, my kids’ favourite was Mexican Chicken AND Pulled Pork.

With regards to the portion sizes – one of the My Main Course packs says it serves 2. However it well DEFINITELY enough to feed this family of 4. So what I did was used HALF of the Mexican Chicken, and HALF of the Pulled Pork.

1/2 pack Mexican Chicken
1/2 pack Pulled Pork
1 cup shredded lettuce
2 tomatoes (sliced)
1/2 avocado (sliced)
1/2 capsicum (sliced)
1 cup grated cheese
Soft Taco shells (or tortillas)
Sauces as you need (I had sour cream)

Gently heat each My Main Course meal in a separate pot over the stove, stirring occasionally. While this is happening, prepare the sides. Serve the My Main Course Mexican Chicken and Pulled Pork in separate dishes, along with the sides and sauces.
