They say that Chocolate Crackle is perfect for birthday parties, but I just liked to eat it myself and tell people they were for my kids. HA!
4 cups rice bubbles
1 1/2 cups (230 grams) icing sugar
1 cup (85 grams) desiccated coconut
3 tbsp cocoa
250 grams Copha / Kremelta / Melted Butter / Coconut Oil (choose 1)
In a large bowl combine rice bubbles, icing sugar, coconut, and cocoa. Mix well. Melt Copha (or Kremelta, or Butter) in a small saucepan over medium heat. When completely melted, pour over the dry ingredients.
Mix well, ensuring all ingredients are covered with the liquid.
With a spoon, fill cupcake cases and place on a baking tray. Chill in the refrigerator for at least one hour.
