Friday Favourites: The One About The Lemon Meringue Slice

The One About The Lemon Meringue Slice

The One With The Lemon Meringue Slice 01
For some reason, this week was another particularly hard week. I had a dentist appointment at the beginning of the week, and had a full check up – found out today that I need $4k worth of work done ???? … I also got sick this week, and am currently still sick. As such, I won’t be streaming live tonight. And I am sorry for that. I just need to go to bed early. Also, we had a traumatic time last night at Disney On Ice (Kids) I’ll still be streaming LIVE on Sunday though, so be sure to check out my
Facebook page at 930am on Sunday!

I will always truly believe in looking at things positively, so even though I had a rough week, I still love looking back at my favourite parts. Read all about my 5 favourite things this week and be sure to let me know below – what’s been your favourite thing about this week?

1. Disney On Ice

Even though the end result was a complete failure (both kids ended up in tears and we had to leave early), we still had a blast for the majority of the show. The show was loads of fun, the characters were funny and the ice-skaters were amazing. If you have enough money to be able to afford this, and have kids of an appropriate age, then I highly recommend it. I can’t wait until my kids are older so that my husband and I can go to shows like this alone HAHA

2. Gluten Free Lemon Meringue Slice

I had a craving for a Lemon Meringue Pie this week, but obviously because I have Coeliac Disease, I am limited to what I can eat. HOWEVER, I found an amazing recipe that I tailored to my own needs, and made it – and it was amazing.

You can get the Gluten Free Lemon Meringue Slice recipe HERE.

3. Allen’s Sea Stretchies

I was inspired by Allen’s Sea Stretchies this week, and made an amazing Ocean Themed Play Dough activity – perfect for teaching kids all about the Ocean and Ocean Life. Not only did they learn, but they got the perfectly portioned treat at the same time! As a parent, that’s a win in my books!

You can see this amazing Ocean Themed Activity HERE.

4. Bath & Potty Time

This week, the lovely Shannon from Bath & Potty Time, kitted Ronan (my 2.5 year old) out with all the necessary items to start toilet training. We got an awesome potty, books, stickers and knowledge and I am beyond excited. Ronan isn’t quite like Chloe, and although is technically ready (in my opinion), is VERY opinionated himself and is a tough nut to crack when it comes to convincing him to sit on a toilet / potty. I feel confident now I have the knowledge to start this process, and I can’t wait to share it with you in blog posts to come! Watch this space!

5. HMHC Turned Two!

This week signifies the beginning of August, and the fact that Happy Mum Happy Child has turned two. That’s right – TWO YEARS OLD! Did I ever imagine I would be in this place two years ago? No way. However, I am beyond grateful and I thank YOU, my reader, for continuing to join me on my journey of fun, laughter, tears and self discovery, as a woman, as a mother, as a wife … as a human being. I wouldn’t be in this position if it wasn’t for you, and for that I am truly grateful.
