I love one-pot meals. Purely because I am hate dishes, and faffing about with everything. This One-Pot Chicken Spaghetti meal is perfect for a winter’s night, and there are minimum dishes leftover.

If you don’t have any of the ingredients, simply add in whatever you want! Especially if you have veggies that are getting a bit old.

INGREDIENTS
500grams chicken, cut into bite sized pieces
Fettuccini or Spaghetti (I used GF Spaghetti), break in half
3 medium carrots, peeled and cut in thin strips
1 medium red capsicum, cut in thin long strips
1/2 cauliflower cut into small pieces (alternatively you can use green onion)
4 teaspoons minced garlic
¼ cup soy sauce
1 teaspoon cornflour
1 tablespoon sugar
4 cups chicken or vegetable stock
2 teaspoons olive oil

DIRECTIONS
Place the ingredients in a stockpot in the order they are listed above. Cover, and heat over a medium to high heat. Once it has reached a rolling boil, turn down to low and simmer for 15 minutes. Stir occasionally during this time. Continue cooking if necessary until the liquid is gone, and the chicken is cooked through.

This can be made Gluten Free by ensuring your ingredients are gluten free. I used Diamond GF Spaghetti and Kikkoman GF soy sauce.
