After making my own Jam, I set about trying to find something yummy to make that I would eat, as well as my kids.
And came across this recipe from the Loveless Cafe. Now I’ve modified it slightly to make it gluten free, but you can simply just use normal flour and it’ll come out the same.

INGREDIENTS
1.5 cup rolled oats
2 cups gluten free flour (or regular flour if you wish)
1.5 cup firmly packed brown sugar
1.5 teaspoon ground cinnamon
1 teaspoon baking soda
250 grams melted butter
1 cup homemade jam
WHAT TO DO
Preheat the oven to 180 degrees.
Combine the rolled oats, flour, brown sugar, cinnamon and baking soda together in a bowl, and mix until combined. You may have to work extra to make sure the brown sugar isn’t all lumpy.
Add the melted butter and stir with a knife until combined and the mixture will stick together when pressed with your fingers.
Line an edged baking dish with baking paper, and place 1/2 the crumb mixture on the bottom. Press down.
Bake in the oven for 20 minutes, or until golden.
Once done, remove from the oven. Spread your jam over the crust and then top with the remaining crumbs and put back in the oven.
Bake fur a further 20 minutes, or until the top is golden.
Once removed, make sure the dish is completely cool before removing from the tray and cutting.
NOTE: I actually made two of these – one set with nectarine jam, the other with apple jam.
