Golden Oat Delights
These Golden Oat Delights are worth making. They take about 15 minutes (or less, depending on how slow you are like me haha) to prepare and about 25 minutes to cook.
INGREDIENTS
130g coconut oil, solid
50g butter, cubed
1/2 cup raw sugar
1/2 cup golden syrup
1 tsp vanilla essence
2 1/4 cups self-raising flour
1 cup rolled oats
1 tsp ground ginger
1/2 tsp mixed spice
200g white chocolate, broken into chunks
1 x large pack of M&M’s or Smarties
DIRECTIONS
Preheat oven to 180°C fan-forced and line a tray with baking paper.
Combine the coconut oil, butter sugar, golden syrup and vanilla essence in a pot on the stove. Heat over a medium heat and stir until everything has dissolved.
In a separate bowl, combine the flour, rolled oats, ginger and spice. Mix throughly and then add the hot liquid mixture.
Use a wooden spoon to mix all of the ingredients together.
Scoop tablespoons of the mixture into your hand and roll into a ball. Place on a the tray and pat flat.
Bake for 10 minutes, then turn each biscuit over and bake for a further 5 minutes..
Once the cookies are completely cooled, melt the white chocolate in the microwave. Spoon heaped teaspoons of chocolate onto each biscuit and decorate with M&M’s.
Eat immediately or wait until the chocolate has set.
NOTES:
This can be made gluten free by substituting out the ingredients for GF ones.
