Rice Bubble Bites
In my ever-ending quest to find suitable snacks for my kids, I thought I’d try my hand at making these Rice Bubble Bites. They are very very simple to make, and are dairy free, and can be gluten free if necessary.
As I state below, I used mini-muffin / cupcake trays, but if you don’t have this, don’t worry. You can use a regular muffin tray, or even cupcake papers.
Also, if you don’t have Coconut Oil, just use butter!
INGREDIENTS
1 ½ cups rice bubbles (or puffed rice)
1/2 cup coconut
1/4 cup coconut oil (melted)
3 Tablespoons Honey
DIRECTIONS
Combine all ingredients in a bowl, and mix together.
Spoon tablespoons into a mini-muffin tray. If you don’t have a mini muffin tray, just use a regular one (or even just cupcake papers).
Pop into the fridge for roughly an hour to set.
If you’ve used the larger muffin trays, (or cupcake papers), then use a knife to cut them in half if needed, once set.
